Phoenicia Honey Co. creates small batch products with local Catskills honey. Many of the plants and flowers used in the infusions are grown at the apiary, which is being expanded to add additional beehives and native flowers for forage. The owner, Rebecca Shim, is a formally trained chef, who relocated here from Brooklyn to learn more about farming, sustainability and where the foods used in NYC kitchens came from. Phoenicia Honey Co. ties her love of food and nature together.
