You Cheddar Believe It Cheese Ball

Growing up, we had some kind of cheese ball or cheese spread served every year during the holidays. When I was studying in Scotland, I introduced my friends to a more gourmet version of it—some had never even heard of a cheese ball before—and they were hooked!

Ingredients

5 oz of fresh goat cheese (about ¾ cup)

½  8oz. pkg cream cheese

1/2 cup grated mature cheddar

1 pkg dried cranberries (reserved 1/2 for the outside)

1/2 orange (juice and 1/2 tsp zest)

1 sprig of fresh rosemary, finely chopped

Pinch of salt

½ cups chopped pecans

Method

  1. In a large bowl, combine the goat cheese, cream cheese, cheddar, ½ of the cranberries, rosemary and salt.
  2. Form the mixture into a ball.
  3. On a piece of plastic wrap, roll the chopped pecans and leftover cranberries on to the cheese ball.
  4. Cover in plastic and chill for at least two hours or until firm.

Serve with crackers.
