Apple Macaroon

This is an easy, healthful recipe with very little fat. White whole wheat is a whole-grain flour made from a white wheat berry.

Serves 6 to 8

Ingredients

  • 4 to 5 large, tart apples (preferably a combination of several different varieties) powdered cinnamon to taste
  • 1 or 2 eggs
  • 1⁄3 cup sugar
  • 1⁄4 cup white whole wheat flour
  • 1 tablespoon ground flaxseed
  • 1 teaspoon baking powder
  • 2 tablespoons plain soymilk or rice milk
  • 1 tablespoon melted butter 

Method

Preheat oven to 375°F

  1. Core and slice the apples.
  2. Place apple slices evenly in a 9-inch pie plate. Sprinkle lightly with cinnamon.
  3. In a medium bowl, combine remaining ingredients to make a thick batter.
  4. Pour batter over the apples.
  5. Bake 40 to 45 minutes at 375°F.
