Ingredients

  • 2 ounces strawberry-infused Half Moon Gin
  • 1/4 ounce organic aged balsamic vinegar
  • 1 ounce Demerara syrup
  • 1 cup egg whites
  • 2 ounces lime juice
  • 1 cup elderflower liquer

Method

  1. Build ingredients into a metal shaker tin.
  2. Add ice and shake for 12 seconds.
  3. Double-strain ingredients into a small coupe glass.
  4. Top with elderflower foam (egg whites, lime juice and elderflower liqueur, shaken vigorously) as garnish.
