Scribner’s Catskill Lodge Announces Exciting Culinary Updates

In Hunter, Scribner’s Catskill Lodge welcomes a new chef and burger residency at Prospect, its onsite restaurant.

Where there are mountains, there are lodges, but Scribner’s Catskill Lodge seeks to reinterpret the classic ski-centered resort. Built in 1996 and reopened in 2016 with a new perspective on hospitality, Scribner’s is Hunter’s premier 38-room mountain lodge. From winter activities like nearby skiing and onsite ice skating to summer fun like lounging by the pool and fireside evenings, the Catskills destination has something for everyone, especially on the culinary front.

Home to in-house restaurant Prospect, Scribner’s has been setting the standard for Catskills dining since its reopening. The restaurant and bar serves New American fare with a focus on local ingredients and producers, as well as fruits and vegetables from the property’s own garden. The carefully curated cocktails and seasonally driven menu are accompanied by panoramic views of the Catskill Mountains at the eatery.

This past June, Scribner’s Catskill Lodge announced the appointment of new chef de cuisine at Prospect, Alejandro Reyes Herrera. Originally from Puebla, Mexico, Chef Herrera has a background working at three Michelin-starred restaurant Cocina Hermanos Torres in Barcelona, Spain, where the restaurant earned its third Michelin star under Chef Herrera’s leadership.

“I am a huge fan of bringing in fresh produce, both from the Hudson Valley and our very own Scribner’s Garden,” says Herrera. “I was inspired by spring and summer flavors—herbs, citrus, and flowers. I wanted to create a really beautiful and colorful menu, which you can see on the plate. That being said, a beautiful plate comes with a tasteful dish, and we hope that when everyone comes through Prospect, they enjoy what my team and I have created.”

Chef Herrera is not the only update at Prospect this summer. The Hunter restaurant also welcomed a burger residency in collaboration with New York City-based Virginia’s this June. Located in the East Village, Virginia’s cooks up a beloved burger that is adored by New Yorkers and tourists alike, and now Hudson Valley residents and visitors to Scribner’s Lodge will be able to taste the burger for themselves.

Named after the restaurant, Virginia’s Burger is a juicy beef patty topped with melty Cabot cheddar, sweet onion marmalade, and a decadent bone marrow aioli. To give the burger its signature crust, the patty is seasoned on all sides for maximum flavor. The dish is the perfect summertime delicacy that tastes exactly like the city-based version, although Prospect sources its burger beef locally to utilize the bounty of the region.

The burger residency will last all summer long and is available on all days of operation, so book your stay at the lodge to experience the meal, along with the culinary excellence of Chef Herrera at Prospect.
