Ingredients
Zoodles (spiralizer needed)
- 2 zucchinis
- 1 carrot (peeled)
Sauce
- 1 tbs peanut butter
- 1 tsp sesame oil
- 1 tsp crushed red pepper
- 1/2 tsp ginger
- chopped fresh cilantro to taste
- 1 clove fresh garlic finely chopped
- 3/4 cup soy sauce or liquid aminos
Mix-ins
- sesame seeds
- 1/4 cup green onions chopped
- 4-5 small mushrooms sliced
- 1 red pepper finely sliced
Method
- Whisk together all ingredients for the sauce in one bowl.
- Spiralize carrot & zucchini in another.
- Put in green onions, red pepper & mushrooms with zoodles and toss together.
- Pour mixed sauce over zoodles and toss.
- Sprinkle sesame seeds on top.
