Chef Matty Hutchins is back. After some time abroad and a few restaurant openings in Atlanta, the former chef behind The Hop in Beacon has returned to the Valley and teamed up with Sterling Knight and Philippe Pierre (owner of Ms. Fairfax) to open Mama Roux, another Newburgh haunt where “Southern cuisine meets country French.”

Step into their new digs and three words immediately come to mind: old world charm. The walls are lined with textured wallpaper, a striking mural of a pelican watches over the dining room, while leafy ferns accent the bar. Perhaps most critical to the ambience is the pot-pourri of antique lighting. “Our lamp game is pretty strong,” Hutchins laughs.

On the menu you’ll find Southern staples like gumbo ya-ya, a fried oyster po’ boy, and that darlin’ of New Orleans, muffuletta. There are also creations that guests simply won’t find anywhere else in the Valley, like gator and crawfish sausage.

But Hutchins, who hails from the Florida panhandle, insists it’s not all about tradition at Mama Roux. He’s keeping thing interesting with dishes like steak and chicories salad, rabbit and biscuits, pork belly and scallops — but if all of that seems a bit too swanky, you can always just order a bucket of fried chicken for the table.
