Ingredients

 2 parts Do the Rye Thing

1 part blood orange juice

0.5 part clove simple syrup

Egg white

Red wine

Chocolate bitters

Clove Simple Syrup (1 cup water, 1 cup sugar, 2 tbsp cloves)

 

Method

For Clove Simple Syrup:

Add water and sugar to pot over medium heat.

Stir consistently until sugar dissolves – do not boil. Add cloves, cover and simmer syrup, 5-20 minutes to desired taste.

Strain out solids and store refrigerated in an air tight container for up to 4 weeks.

For Cocktail:

Add Rye, blood orange juice, clove simple syrup and egg white to shaker with no ice. Dry shake thirty seconds to create foam.

Add ice to shaker, shake to chill and strain into rocks glass over few cubes.

Gently float red wine on top. Garnish with drops of chocolate bitters atop foam.
