- 3 cloves garlic
- 1 tablespoon capers
- 6 ounces silken tofu
- 3 tablespoons lemon juice or apple cider vinegar
- 1 tablespoon white miso
- 2 tablespoons nutritional yeast flakes
- 1/2 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 cup extra virgin olive oil
- about 1/2 cup water (to thin dressing)
- sea salt and freshly ground black pepper to taste
- In a food processor, mince garlic and capers.
- Add remaining ingredients and blend until emulsified.
