Vegan Caesar salad dressing

Ingredients

  • 3 cloves garlic
  • 1 tablespoon capers
  • 6 ounces silken tofu
  • 3 tablespoons lemon juice or apple cider vinegar
  • 1 tablespoon white miso
  • 2 tablespoons nutritional yeast flakes
  • 1/2 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • about 1/2 cup water (to thin dressing)
  • sea salt and freshly ground black pepper to taste

Method

  1. In a food processor, mince garlic and capers.
  2. Add remaining ingredients and blend until emulsified.
