Doris Clearwater Jones, Jones Farm
Yields 2 loaves
Ingredients
- 1 1/2 cups brown sugar
- 1/2 cup oil
- 1 egg
- 1 tsp. baking soda
- 1 cup buttermilk
- 1 1/4 cups whole wheat flour
- 1 1/4 cups white flour
- 1 tsp. salt
- 1 1/2 cups diced rhubarb
- 1 tsp. vanilla
- 1/2 cup chopped nuts
- 1/2 cup brown sugar
- 1 tsp. cinnamon
- 1 1/2 tbsp. butter
Method
Preheat oven to 325º F.
- Grease 2 bread pans.
- Mix the brown sugar and oil, add the egg and beat well.
- Dissolve the baking soda in the buttermilk and set aside.
- Sift the flour and salt together and add to the sugar-oil mixture, alternating with the buttermilk.
- Stir in the rhubarb, vanilla and nuts.
- Pour into the bread pans.
- Combine brown sugar, cinnamon and butter.
- Sprinkle over batter.
- Bake at 325º F for about an hour.
- Remove from pans and cool on wire rack.
