Growing up, we had some kind of cheese ball or cheese spread served every year during the holidays. When I was studying in Scotland, I introduced my friends to a more gourmet version of it—some had never even heard of a cheese ball before—and they were hooked!
Ingredients
5 oz of fresh goat cheese (about ¾ cup)
½ 8oz. pkg cream cheese
1/2 cup grated mature cheddar
1 pkg dried cranberries (reserved 1/2 for the outside)
1/2 orange (juice and 1/2 tsp zest)
1 sprig of fresh rosemary, finely chopped
Pinch of salt
½ cups chopped pecans
Method
- In a large bowl, combine the goat cheese, cream cheese, cheddar, ½ of the cranberries, rosemary and salt.
- Form the mixture into a ball.
- On a piece of plastic wrap, roll the chopped pecans and leftover cranberries on to the cheese ball.
- Cover in plastic and chill for at least two hours or until firm.
Serve with crackers.
